At MoaAlm we are currently traveling with our taste buds and exploring new cultures through our food. Even though we are without guests during these challenging times, we are still cooking up a plant based storm most evenings (we must admit to the occasional TV dinner!)
Malaysia is one of those countries where so many different cultures have passed through. Malaysian cuisine became a delicious melange of many influences. Anybody with an open mind for new flavours, who has roamed the streets of Penang, would agree that it holds endless surprising delicacies. Traces of Indian,Thai, Indonesian, Chinese are mixed with Dutch and English influences and all brought together into the traditional ways of the Malay and Bornean ethnic groups. Often dishes combine all flavours; sweet, salty, sour, bitter and spicy into an orgasmic symphony playing our taste buds.
This tofu preparation can be served as a starter for 6-8, a side, or, when combined with a rice dish, as a main course for 4.
250g tofu
1 chilli
1 clove garlic
1 teaspoon of veg stock base, mixed with little water to form paste
3 tbsp soy sauce
1 tbsp peanut butter
Toasted and salted crushed peanuts
2 tbsp sesame oil
1 red pepper
1/2 red onion
Make a marinade of finely chopped chilli & garlic, stock & soy sauce. Cut the tofu in cubes and cover in marinade, leave for at least an hour. Add the peanut butter and stir through the marinated Tofu. The marinade should be sticking to the tofu cubes. Prepare a plate with toasted and salted crushed peanuts and roll the tofu cubes until all sides are covered.
Arrange the tofu cubes on a skewer, alternating with slices of red pepper and red onion. Heat sesame oil and fry for a couple of minutes on all sides.
Flesh of 1 mango
Juice of ½ lemon
2 tbsp soy sauce
½ chilli
Sugar & salt to taste
Blend all the ingredients together, if too thick, add a little water.
