Smoked Tofu Vegetable Tart

For a special lunch or brunch treat on the weekend, this Smoked Tofu Vegetable Tart is packed full of flavour. Feel free to add any vegetables that you have available to you in your kitchen that are seasonal, creating your own version of this tofu tart. This vegan tart or quiche is super tasty and satisfying, without being greasy and heavy like traditional quiche.

Smoked Tofu Vegetable Tart

For the crust:

• 330g flour

• 200g non-dairy butter

• 2tbsp water

•1 tsp salt

For the filling:

• 1 pack of smoked tofu (250g)

• 1 yellow pepper

• Half of courgette

• 3 small onions

• 2 cloves of garlic

• 6 cherry tomatoes

• 1tsp of chilli

• 1tsp of sugar

• ½ tsp of apple cider vinegar

• 1tsp of your choice green dried herbs, we used basil

First make the crust. Mix the flour with the salt, cut room temperature butter into small cubes and incorporate it into the dough. We use our hands. If the mix is still crumbly and dry, add a splash of water. Then cut the dough into two halves. Put one halve into the fridge and the other one roll, then press it into the bottom of your tart dish. Bake the crust for 10 minutes in the oven at 180C degrees

While the crust is baking, prepare your filling. On medium heat with a splash of oil, saute the onions and garlic until nice and soft, then add the pepper and courgette. Then, add the chilli, herbs, sugar and vinegar and cook for 5-10 minutes until the veggies soften.

Take off the heat and mix with tofu, which has been mashed. Season with salt or pepper 

Now add the filling into the tart, spread it equally. 

Take out of the fridge the rest of the dough and roll it into whatever shapes you want to add on the top. Put some cherry tomatoes on top, brush the dough on top with a bit of non-dairy milk and cook it in the oven 190C degrees for about 25-30 minutes.
