Vegan Fruit Tart

We love fruit tarts! You can play with the ingredients to suit the seasons and you can have them warm in the winter or cold with ice cream in the summer. They are also easy to make vegan, making them look beautiful or rustic and wholesome. Fruit crumbles are also so adaptable and a sweet treat that can be altered to suit the seasonal fruit available. We are already excited about the wild red currants we forage around our home at MoaAlm Mountain Retreat in July.

Vegan Apple and Berry Fruit Tart

Apple and Berry Tart

Ingredients:

• 270g All-Purpose Flour

•1 cup Icing Sugar

•Pinch of Salt

•Pinch of Cinnamon

•140g Non-dairy Butter

•2tbsp Cold Water

•5 big apples

•1cup frozen berries, thawed

•Pinch of Cinnamon

•1tsp lemon juice

•50g Brown Sugar

•2tbsp water

Instructions:

First, cut the apples into cubes. Then pour brown sugar, lemon juice, water and cinnamon into the pan and heat it on the medium heat for about 5 minutes. Once it starts to bubble, add the apples and cook it until they become soft and a little bit brown, then put to one side.

Next, make the tart dough by mixing flour, icing sugar, cinnamon and salt. Add the butter and with your fingers massage it into the flour mix. It should be crumbly, then add slowly the water. If the mix is still pretty dry, add more water, if too wet, add some more flour. Knead it for a few minutes until the dough is nice and moist. Make a dough into a ball, oil it and keep it in the fridge for an hour.

Then separate the dough into two and roll one part into a circular shape, take your tart tin and press it at the bottom, making sure that dough covers the sides too. Then add your apples and thawed berries on top. Spread them evenly. Now roll another part of the dough into long stripes and cover the top, joining the stripes to the edges. Be creative, you can make any design you want. 

Preheat your oven to 180 C degrees, sprinkle some brown sugar on top of the tart and bake it for 25 minutes until golden brown.

Vegan pear, strawberry crumble with ginger 

Ingredients: 
Filling

• 500 g Pears 

• 500 g Frozen Strawberries 

• 2 tbsp Ginger Grated 

• 50 ml Water 

• 50 g Brown sugar 

• Juice of 1 Lemon 

• 1 tsp Cinnamon 

• 3 tbsp White flour 

Crumble 

• 200 g Vegan butter 

• 100 g Brown sugar 

• 150 g Spelt flour 

• 100 g Oats Ground 

• 100 g Almonds Ground 

• 1 pinch Salt 

Instructions: 

Preheat the oven 180°C. Place the pears, berries in a deep saucepan. Add the ginger, sugar, cinnamon, lemon juice and water and mix together gently to combine. Add the flour and then cook over a low heat for 5 minutes to soften slightly, stirring occasionally and taking care not to break up the fruit. 

For the crumble, combine the flour, cinnamon and salt into a large bowl, then add the ground almonds, oats and sugar and mix to combine. Add the butter and rub in with your fingertips until light and breadcrumb like in texture. Spoon the cooked fruit into the baking dish, then cover with the crumble mixture. Bake in the oven for about 40 minutes until the filling is bubbling and the topping is golden brown. 

Remove from the oven and serve with vegan vanilla ice cream or custard.
